Fortnightly Baking Fun Challenge #7...........

 Hello everyone.
Today is Tuesday and that means a new Fortnightly Baking Fun Challenge.

The new challenge’s theme is.............
Snazzy Snacks!!!!!!!
Any kind of snack, something sweet, or salty, whatever you can come up with - or your all time favourite snack. It can be anything small that you can eat with one hand - biscuits, slices, mini sandwiches, pies, tarts etc. 
The PRIZE for this challenge sponsored by my mother is the
Australian Women’s Weekly Snazzy Snacks recipe book!!
I will ship it anywhere in the world. This book is filled with quick and easy recipes...just the way snacks should be. These fabulous snack recipes are perfect for after school nibbles, a fast lunch or dinner on the run. Many of the recipes also double as delicious finger food for parties. All recipes are amazingly simple and quick to make and range from toasted sandwiches, quick fritters and spring rolls to spicy chicken wings, dips and simple eat-out-of-hand snacks such as trail mixes. My example is Cucumber sandwiches!
To make 10 round cucumber sandwiches.
You need:
10 normal slices of bread
Round cookie puncher, about 8cm/3inch big 
A cucumber about 16cm/6inch long 
Soft Butter (for the bread)
About 1 ½  tablespoon coarse white salt. Fine salt will not work, it will be to salty.
Method:


 1 Cut 10 slices of bread.

2 Press the cookie puncher in the bread.

3 Press very hard and turn.



4 Butter the bead circles. Put aside.
5 Rinse the cucumber and cut lengthwise in half.


6 Take a spoon and carefully scrape out all the seeds.


7 It should look like this.
8 Thinly slice the halves crosswise.


9 Put the cucumber slices in a strainer and throw in the salt. 


10 Toss the slices, so they’re all covered with salt.

11 Squeeze small hands of the cucumber very hard in your fist to extract the liquid.


12 Squeeze till there is no more liquid when you press it. 



They do look a little wilted.
13 Arrange the cucumber halves on the bread circles

-After the challenge has closed, I will announce the entries in a separate posting and you will be able to vote for your favourite recipe.
-You are all allowed to advertise anywhere you like for people to vote for you, on your blog, Facebook, Twitter, etc.
-I will have a personalized blinkie, specially for the Winner. As well as the PRIZE!! I ship anywhere in the World!
-Age doesn’t matter, from little girls to grandmas are welcome to enter!
-The aim of the challenge is to encourage mothers and grandmas with their girls to enjoy making food in the kitchen, to share recipes, find new ones and have lots of fun together!
